Specialties of the city of Pau, the coucougnettes are a tribute to the good king Henry IV (1553-1610) known for his love of women and his many mistresses. The word “coucougnettes” comes from the Béarnais dialect which means cuddling, snuggling… therefore offering a moment of tenderness.
The coucougnettes are made of caramelized roasted almonds, coated with dark chocolate and rolled by hand in a raspberry, ginger and Armagnac flavored marzipan.
