A specialty of the city of Bar-le-Duc, this unique jam is also called “Bar-le-Duc caviar”. Its recipe dates back to 1344 and very rapidly kings and princesses adored it.
Mary Stuart, Queen of Scotland, said that this jam was “a ray of sunshine in a jar”. The French president, Raymond Poincaré, wanted it on the tables of the Elysée Palace. Alfred Hitchcock, Winston Churchill and Victor Hugo… loved it as well.
Only two varieties of red currants can be used in this jam: the Versaillaises and the red currants from Bar.
The beveled goose quills and the dexterity of the deseeding craftsmen and women ensure the extraction of the tiny seeds without harming the fruit.
