and so they named the salt white gold.
In 1246 King Louis IX created a salt tax called gabelle because salt was the only way to keep food fresh.
Fortunately he exempt the region of Brittany from the tax which allowed the local gastronomy to prosper
with it’s original recipes using salt butter.
